Italian Salad

The other night at our dinner party I served an Italian Salad that I often serve when we have guests over. It is easy and delicious and pairs well with pasta, chicken, pork tenderloin or just about anything you plan to serve!

Italian Salad
2 bags of Italian Salad Mix
2 cans artichokes, drained & chopped
2 package fresh sliced mushrooms
1 can garbanzo beans
1 package grape tomatoes (I like to cut each tomato in half)
Shredded parmesan to taste
Creamy Garlic salad dressing

Creamy Garlic Salad Dressing
1 t. salt
3 minced garlic cloves
1/2 c. mayo
3 T white vinegar
3 T oil

Combine salt and garlic in small bowl, pressing with the back of a spoon to form a paste. Whisk in remaining ingredients. Cover and chill for at least one hour.

Mmmmmm!!! next time you are up my way (your next trip to Swoozie's) you need to drive a block or so further to Billy's Bakery... the best in Fairfield Cty and pick up some delicious ciabatta to have with your salad... Or, maybe I'll be nice and bring one with me next time I see you!

Wow! This looks delicious. May I put it in my next cookbook ? I give cookbooks to friends & family for Christmas, birthdays, housewarming, etc. I will put your name under it & any kind of story you want me to tell with it....
For example, my friend, KK, loves to make this salad. She often serves it with ciabatta from Billy's Bakery in CT!
