Last Little Bit of Louisiana Fun

We are going home tomorrow and I am soooo sad. Today the girls hung around my mom and dad's house while I packed up (we have to get up at 4:30 am to catch our flight!).

Pinkie made a hideaway in Papa's office

Then the girls had a picnic lunch in the family room

And played with my old Barbies (you can't see it, but there is a Marie Osmond Barbie doll in there!)

My mom and dad have gone above and beyond making our visit so very special (thank you for EVERYTHING, mom and dad!) and I am truly dreading our return to "Yankee Land." Don't get me wrong, we have a great life in CT, but it is just not home. Miss Priss is staying by herself for another week to have special time with Nana and Papa. They are going deep sea fishing, on a tour of Nottoway plantation, and who knows what else. Oh, wait, I have an idea--do you think Prissy will switch places with me? I'll stay here and she can go back to CT and unpack!!!

Hairbows!

Whenever I am in Baton Rouge, I always have to stop by the bow lady and get any bows we don't have. Aren't they scrumptious?!

Fun in Louisiana

Spending time in Louisiana is so much fun!!!

The girls and I are in Baton Rouge visiting Nana and Papa for a few weeks and on Wednesday I had the pleasure of eating lunch with my mother at the French Market Bistro where she and her friends have their art on display.

Southern Stories


The Help by Kathryn Stockett is one of the best books I have read in a long time. Set in the South during the 1960s, The Help is currently listed at #8 on The New York Times Best Seller list. This story is a must read for not just us Southern ladies, but everyone--my two neighbors, one a Jewish girl from Staten Island, and the other, a Mormon from California, loved it as much as I did! None of us could put it down!

Garden Goodness

My garden is finally starting to produce a real harvest and I am sooooo excited!!!

Yesterday, I got my first tomato and my first squash

I was also able to pick a big ole bunch of green beans and I made Bacon-Feta green beans with them. Let me tell you, this recipe is TO DIE FOR!!! You MUST try this one!

(Note: I used fresh green beans so I had to modify the recipe a little bit. If you do not have access to fresh green beans, Trader Joe's & Aldi's have excellent frozen green beans.)

INGREDIENTS

  • 8 slices bacon - cooked, crumbled and divided
  • 1 (16 ounce) package frozen cut green beans
  • 1 teaspoon minced garlic
  • 4 ounces crumbled feta cheese, divided
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons water

DIRECTIONS

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned but only slightly crisp. Drain grease, leaving a small amount in the skillet for later use. Crumble bacon, reserving 2 tablespoons for garnish, and set aside.
  2. Cook frozen beans in a covered, microwavable dish for about 3 minutes until thawed, but not fully cooked. Drain liquid, pat dry, and set aside.
  3. Reheat skillet with residual bacon grease over medium-high heat. Stir in bacon and garlic until garlic is lightly golden. Add green beans and feta cheese, and season with onion powder and black pepper. Cook and stir until most of the feta cheese has melted, about 2 minutes. Transfer to a serving dish, and garnish with remaining feta cheese and crumbled bacon. Serve hot.

Fourth Day at the Shore


We spent our last day at the shore shopping around Cape May. Cape May, the last stop on the Garden State Parkway, is a quaint little Victorian village. If you are ever nearby you really should stop and see the gorgeous Victorian mansions located there!

Third Day at the Shore

On our third day at the shore, we finally hit the beach!

Pinkie spent a long time playing in the sand

while Miss Priss supervised and worked on her tan

Daddy even got in on the action and helped Pinkie build a killer sand castle!

The beach by our house does not have waves because it is on the Long Island Sound so the girls were so excited to ride the waves on their boogie boards

Before going out to dinner for more seafood (what else do you eat at the sea shore?!) we hit the boardwalk to souvenir shop. Pinkie picked out a pink guitar

and Miss Priss picked out a hot pink custom hoodie.

We had dinner at the divine Lobster House in Cape May

Second Day at the Shore

On our second day at the shore we hit the water parks!

While Daddy and Miss Priss went down the big slides, Pinkie had a ball in the kid's section. Never having been to a water park before, this little water baby was in heaven!

Both girls had a great time!!!

After another long day, we headed back to the hotel to get dressed for a night out at a local seafood restaurant

First Day at the Shore

We spent our first day at the shore on the boardwalk riding rides. Miss Priss and her Girl Scout troop recently attended Beach Jam at the same spot and she begged us to bring her and Pinkie back for more fun. It is so hard to find things that both a 4 year old and a 12 year old can enjoy, but we knew that they would both go for amusement rides so we agreed.

The boardwalk is made up of three piers. Each pier has fun rides and water park activities, along with lots of food, souvenir shops and great people watching!

The weather was great and there were hardly any lines!

After a long day of fun we checked into our hotel, The Starlux--a really cool place with a doo-wop retro 50's theme. You could even rent an airstream trailer on the property and stay there if you wanted to!

4th of July Menu

Our 4th of July Menu--what are you eating?!

Grilled Flank Steak

From Country Living
This recipe has been tested by Country Living

One of the less expensive cuts of beef, flank steak absorbs marinade readily and is tender and juicy when cooked and sliced properly. Serve with our fiery Corn Relish (pictured).

INGREDIENTS conv. chart U.S. Metric
1 pound(s) flank steak
1/2 cup(s) olive oil
1/4 cup(s) Worcestershire sauce
2 clove(s) garlic, crushed

Salt and freshly ground pepper

DIRECTIONS

  1. Marinate flank steak in olive oil, Worcestershire sauce, and garlic for 1 3/4 hours.
  2. Remove from marinade and season with salt and pepper. Grill until medium-rare, about 7 minutes per side. Let steak rest for 15 minutes before thinly slicing. Serve hot or at room temperature, topped with Corn Relish.
Corn Relish

From Country Living
This recipe has been tested by Country Living

Serve this spicy corn relish with our marinated Grilled Flank Steak.

INGREDIENTS conv. chart U.S. Metric
2 tablespoon(s) olive oil
1 cup(s) chopped red onion
2 medium seeded jalapeños, finely chopped
1 cup(s) fresh corn kernels
1/2 teaspoon(s) sea salt
3/4 teaspoon(s) crushed red pepper
3 tablespoon(s) fresh lime juice
1 tablespoon(s) honey

DIRECTIONS

  1. Heat oil in medium skillet over medium heat.
  2. Add onion and jalapeños and cook for 1 minute. Add corn and continue to cook until vegetables are slightly soft, about 5 minutes. Remove from heat and toss with remaining ingredients. Cool and serve at room temperature over Grilled Flank Steak.


  1. Strawberry/Blackberry Triffle:
  2. 1-1/2 cups cold 1% milk
  3. 1 package (1 ounce) sugar-free instant vanilla pudding mix
  4. 1/2 cup reduced-fat sour cream
  5. Homemade whipped cream
  6. 1 box yellow cake mix baked in a 13X9 pan, cubed
  7. Toss with 1 cup sugar--4 cups fresh strawberries, halved and hulled, & blackberries

Directions:

In a bowl, whisk milk and pudding mix for 2 minutes or until slightly thickened. Add sour cream; mix well. Fold in whipped topping. In a 2-qt. trifle dish or deep glass bowl, layer half of the cake cubes, half of the berries and half of the pudding mixture. Repeat layers. Cover and refrigerate for 2-3 hours before serving. Yield: 8 servings.

HOMEMADE WHIPPED CREAM
1/2 pt. whipping cream
3 tbsp. sugar
1 tsp. vanilla
Whip cream with mixer. Be careful not to overbeat or else will get too thick like butter. When it begins to thicken, add sugar and vanilla; stir. Refrigerate.


Pasta Salad--Tri-Color Radiatore Pasta with Asparagus, Shallots, Tomatoes, Parmesan Cheese and Spices topped with a Balsamic Vinaigrette

After we eat and hang by the pool for a while we plan to meet our friends at the town celebration to listen to several bands and watch the fireworks. What are you doing?!

I Was Country When Country Wasn't Cool..

I just love that song by Barbara Mandrell, don't you? I used to love watching the Mandrell Sisters on Friday nights. Louise was my favorite.

Well, yesterday we got our country on for sure. It has been raining cats and dogs here but the sun did peek out for a little while so after taking the girls to the cement pond in town for a short swim (yes, we really do have an actual cement bottom pond here at one of our parks!) we came home to pick berries from this overgrowth on the side of our property.

And just in case the neighbors didn't already think we were red enough, Pinkie picked berries in her bathrobe and rain boots!

I am pretty sure that every who drove by thought the Clampett's had descended on town. We may very well be the only people in town who pick and eat berries that grow wild in the yard!

Next, we headed over to our vegetable garden to pick some lettuce and herbs for supper.

Here are my tomatoes that should be red very soon!

Isn't my garden scooter the cutest?! I got it at a garage sale for $5 (they retail for $150) and Mr. K spray painted it pink for me, that doll!

We made a yummy salad with the lettuce we picked and Miss Priss made some olive oil and butter tossed pasta and sprinkled the fresh herbs on top

And with our blackberries, we made the world's easiest cobbler

1 cup self-rising flour

1 cup milk

1 cup sugar

1 cup melted butter

1 cup berries

Combine milk, sugar, flour, and butter. Pour into baking dish. Pour berries on top. Place uncovered into oven and bake at 375 degrees for 30 minutes.

Our country day was big fun and while no one was looking I was putting peanuts in my Coke...
